Ivory teff flour has a slight nutty taste that adds a lot to lighter baked goods like muffins and pancakes – and its low glycaemic index and lack of gluten mean that a lot more people will be able to enjoy them. They’ll be getting a lot of nutrition along with the delicious flavours, too, because teff is a supergrain among supergrains, rich in resistant starch with twice the fibre of brown rice, three times the calcium of quinoa, three times the iron of buckwheat, more magnesium than chia, and only a third as much fat as oats.
