Healthy Thai Green Curry with Prawns

INGREDIENTS

  • ORGANIC OLIVE or COCONUT Oil to cover bottom of pan
  • 2 ORGANIC BROWN ONIONS finely sliced
  • 3 tbsp HART & SOUL Thai Green Curry paste
  • 1 or 2 ORGANIC RED CHILLI sliced/diced
  • 20g Fresh ORGANIC GINGER grated
  • 200g ORGANIC SNOW PEAS
  • 400ml Tin ABSOLUTE ORGANIC COCONUT MILK
  • 1 Medium ORGANIC ZUCCHINI cut into 4 then quartered
  • 18 GREEN KING PRAWNS raw & peeled from Kylie at AGNES WATER SEAFOOD 
  • 1½ tbsp Fish sauce
  • 2 LIMES  - Grated zest & juice 1 lime, plus wedges or halves to serve from 1770 Limes
  • Bunch Fresh ORGANIC CORIANDER chopped
  • Steamed ORGANIC JASMINE RICE to serve

METHOD

  1. Heat OIL in a large deep frying pan or wok over a medium heat & fry the ONIONS for 5 - 10 minutes until softened
  2. Stir in the CHILLI, GINGER & CURRY PASTE stir-fry for 2-3 minutes.
  3. Add SNOW PEAS for another 2-3 minutes.
  4. Pour in the COCONUT MILK & bring to a gentle simmer.
  5. Add the PRAWNS, FISH SAUCE, ZUCCHINI, LIME ZEST & JUICE, then gently cook for 5 minutes.
  6. Stir in about 2/3 of the CORIANDER
  7. Then serve with STEAMED RICE, the rest of the CORIANDER & LIME WEDGES
